TV is a giant part of my life and with OnDemand and DVR, I love having control over when I watch all my favorite shows. The worst part though is waiting for your favorite show to come off of hiatus and start the new season. My TR&B self got the hook up and received an advance screening disk of Nurse Jackie’s upcoming Season 4. Let me just tell you that I’m already ADDICTED (pun intended). Jackie Peyton is a drug addicted Nurse played by Edie Falco. Season 4, Jackie finds herself hitting rock bottom. Her marriage is in shambles, her tweenage daughter hates her, and her addiction to pain killers and anything thing else she can get her hands on is getting the best of her. Even the one thing Jackie excels in is at risk, her job. After a SOBER night of watching the first 5 episodes I’m finding myself JONESING for the next. I did receive a special treat in episode 4 (I think), Michael Arden (an acquaintance from years past) made a cameo as a patient that thinks that he has broken his penis. I met Michael when he was in an Off-Broadway musical called BARE: A POP Opera. I remember finding it odd then that Michael didn’t drink so as his success builds perhaps he’ll be finding himself THIN RICH & SOBER. It is weird seeing people you know on TV, the first time I saw Michael on TV was a few years back in a Pizza Hut commercial with Donald Trump. Sorry, Sorry, back to topic… Nurse Jackie and her team at All Saints Hospital will keep you entertained week after week. Season 4 Premiers on SHOWTIME at 9pm Sunday, April 8th.

It’s Friday, so here is a little something new I’d like to call TR&B FOODIE FRIDAYS:

My BESTIE, J.D. is a FOODIE, actually she’s the trifecta she’s THIN RICH & BOOZIE and I adore every moment I get to share with her, which are now rare as she abandoned me in NYC and transplanted herself in our nation’s capital, Washington, DC. Back when I was THIN POOR & BOOZIE, Ms. D was one of several people who made sure I ate and drank my way to success. All though I in no way consider myself a FOODIE, I love seeing people who are passionate about food… As one of TR&B’s biggest fans, she suggested adding fun recipes that are affordable and light, paired off with wine or a cocktail.
J. D. - (I) Was eating dinner tonight – my version of dieting, FOODIE style – and it made me think of one of my tricks. In my head I think of it as “pound it out” – so dirty. You take whatever meat you’re eating (chicken breasts, pork chops, etc) and pound it (with a mallet, rolling pin, or even bottom of a saucepan, whatever) into thin cutlets. Takes a reasonable amount of meat and makes it seem like it’s twice as much so you feel indulgent, like you’re getting a lot.
POUND IT OUT CHICKEN PARM- (Cooking for 1, adjust for more)
- Salt and Pepper (Pounded) Chicken Cutlet
- Bake Chicken Cutlet at 350 for 15/20 minutes
- While baking, heat ½ cup of jarred tomato sauce
- Top the chicken after it is baked with the sauce
- Top off with one or two thin pieces of fresh mozzarella
- Put it under the broiler for a min or two until cheese is gooey.
- Add Little fresh basil
With the chicken I do one (let’s be honest, two) glasses of red wine. Italian wine complements Italian food so I’d go with a Nero D’Avola or a Sangiovese. Just no Chianti – yuck.
Delish! Super healthy, low cal and you feel like you’re getting a ton of food.
